We have a dear friend who makes 'the best' no bake cookies and shares them! This is just a quick and easy way to share with someone special, just how much you care. It's also a recipe that can be doubled and saved for those moments that you want to share a little something created with love. Here's a super quick and easy recipe to get you started...
No Bake Cookies
3 to 4 tablespoons unsweetened cocoa powder or milk chocolate chips
1/2 cup unsalted butter
1/2 cup milk-I like whole milk and have used half and half to make it a little richer.
A pinch of Kosher salt
3 1/2 cups small quick cooking oats
1/2 to 3/4 cup peanut butter-creamy or chunky
1 teaspoon + a splash more vanilla extract
I like a little bit more oats and peanut butter. I sometimes add crunched peanuts into the mix instead of chunky peanut butter, and a little something extra to sprinkle across if you'd like it add a flair of gourmet is sea salt flakes. It's especially good if you use the milk chocolate chips, but not too much, just a light sprinkle.
On a baking sheet, spread waxed paper across the top and let sit until the last part of the directions. On the stove top, in a medium saucepan bring sugar, cocoa, butter, milk/half and half, and salt to a boil for about one minute-don't let it sit too long and burn. Add small quick cooking oats, peanut butter, and vanilla; mix together rapidly. This next part goes fast, and the chocolate can be very hot, so be careful when working with children so they don't get burned. With a small spoon, drop teaspoonfuls of the mixture onto waxed paper, and let cool until the cookies easily pull away from the waxed paper. You can refrigerate to help cool quicker. Enjoy!
