This is one of my favorite slow cooker freezer meals. One of our ranching neighbors in Steamboat Springs brought this to me as a meal after our first son's birth, and I couldn't have been more grateful for the homecooked hearty meal. This is one of my 'go-to' freezer meals, and is always soooo good!
Ingredients
2 1/2-3 lb corned beef brisket
6-8 small red potatoes, cut in half
1 1/2-2 cups mini carrots
1 small cabbage, cut into chunks (or I've used little brussel sprouts)
1 quart apple juice
1 cup brown sugar
1Tbsp spicy brown mustard
Place meat and vegetables in the slow cooker first, then add the apple juice, brown sugar, and mustard. Cover and cook for 6-8 hours. Remove vegetables first, and next thinly slice the corned beef on the grain. Serve with homemade croissants or cornbread. Enjoy!

For a freezer meal...freeze a 2 1/2-3 lb corned beef brisket. In a gallon Ziplock bag, add the vegetables, brown sugar and spicy mustard. Label and freeze the meat, vegetables, and have a can of apple juice concentrate together, so you can grab it and drop it into the slow cooker all together.
